Gluten-free Zucchini Bread French Toast Sticks. Wow, that was a mouthful! If you haven’t tried turning banana or zucchini bread into french toast, then you’re in for a treat.

I made zucchini bread a couple of days ago, but it’s hard to finish an entire loaf with a household of two (I know, hard to believe I couldn’t finish sweets). Instead of tossing the bread when it started to dry out, my aunt, a classically-trained chef, had an amazing idea: transform it into french toast. She couldn’t have made a better suggestion. The outside of the french toast is crunchy, while the inside is soft and flavorful from soaking up the spiced egg batter. This is an ingenious way to take one recipe and make two delicious, quick meals.

There are only 6 ingredients, 10 minutes, and a healthy appetite needed for this recipe. Enjoy the zucchini bread as a quick weekday snack, and spice it up by making french toast with the leftovers on Saturday morning. Is your zucchini bread starting to dry out? Transform it into another amazing breakfast by dipping, flipping, and frying.

Ingredients

  • ½ loaf of zucchini bread, dried out (see instructions below)
  • 2 eggs
  • ¼ cup coconut milk (any milk will work)
  • 1 tsp cinnamon
  • ¼ tsp vanilla extract
  • 1 tablespoon coconut oil or butter, for frying
  • Optional toppings: maple syrup and toasted chopped pecans

Instructions

Slice the zucchini bread ½ inch thick and place on a wire rack to dry out overnight, or up to 48 hours.

When you’re ready to start cooking, heat a large nonstick skillet on medium-high heat and add the coconut oil.

Beat the eggs in a shallow dish and add the coconut milk, cinnamon, and vanilla extract.

Dip the zucchini bread sticks into the egg mixture, flipping to coat both sides.

Place in the heated skillet and cook about 2 minutes per side, or until golden-brown.
