Mint Chocolate Chip Pancakes

I’m always trying to create healthy, tasty recipes using my favorite flavor combinations. One of those combinations is mint chocolate chip. This brings me back to childhood when I’d ride my bike to the local ice cream shop for a scoop of mint chocolate chip ice cream. There was something enticing about the bright green color with chocolate speckled throughout. Instead of using green dye, I’ve included a hidden ingredient to naturally dye the batter.

These pancakes would taste great with just the mint extract, but including fresh mint adds a light and refreshing element. If you like your sweets more bitter, then try cacao nibs in place of the chocolate chips. It’ll lower the sugar in the recipe and still provide a rich, chocolate flavor.

Mint Chocolate Chip Pancakes

These dairy- & gluten-free minty pancakes are light and fluffy. You’ll never taste the surprise ingredient!

Ingredients

  • ⅓ cup (37g) blanched almond flour
  • ¼ cup (18g) vanilla collagen or pea protein powder (1 scoop)*
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt
  • 2 tbsp (30ml) maple syrup
  • 1 egg
  • ¼ cup (35g) mashed ripe avocado
  • ¼ cup (60ml) unsweetened vanilla coconut milk
  • ¼ tsp pure vanilla extract
  • ½ tsp mint extract
  • 4 fresh mint leaves, optional but recommended
  • 3 tbsp (45g) dark chocolate chips

Instructions

In a medium-sized bowl, mix the almond flour, collagen/protein, baking powder, baking soda, and salt.

In a blender, blend the maple syrup, egg, avocado, coconut milk, extracts, and mint leaves until smooth.

Stir the wet ingredients into the dry until just combined. Fold in the chocolate chips.

Heat a nonstick skillet on medium heat and spray with nonstick cooking spray.

Once the pan is heated, use a cookie scoop to drop circles of batter into the pan.

Once the pancakes start to bubble, flip and let them cook on the other side until golden-brown.

Notes

* If you don’t like protein powder, you could use 1/4 cup (20g) oats, ground into a fine flour.
