German Chocolate Overnight Oats

Part of my Sunday mornings are spent meal prepping for the week. It makes me feel organized and ready to take on the week’s challenges. Plus, there’s something therapeutic about cranking up the music, cooking, and belting the lyrics to my favorite tunes. I’m sure my neighbors don’t find this as relaxing as I do!

Like everyone else, my weekday mornings are hectic and start early. Unless I plan on skipping breakfast, meal prepping is a must. I typically switch off between egg muffins and overnight oats throughout the week, but there’s still a need for variety. This dish tastes like dessert and are a fun way to elevate traditional overnight oats. After trying these, you’ll want to ditch the bland oats and sugary oatmeal packets.

This chocolatey gluten- & dairy-free oatmeal will have you looking forward to mornings!

Ingredients

  • ½ cup (40g) rolled oats
  • ½ tsp (1g) cocoa powder
  • 1 scoop chocolate collagen or protein powder* (I used Superior Source Chocolate Collagen)
  • ½ cup (120ml) unsweetened coconut milk
  • ⅛ tsp pure vanilla extract
  • 1 tbsp (5g) unsweetened shredded coconut, toasted
  • 1 tbsp (7g) chopped pecans
  • 1 tsp (5ml) maple syrup (optional)
  • 1 tsp (5ml) unsweetened coconut milk

Instructions

Combine the oats, cocoa powder, collagen/protein, vanilla, and coconut milk in a bowl. Stir to combine.

In a separate bowl, stir the coconut, pecans, maple syrup, and coconut milk. Pour this mixture on top of the oats.

Cover and refrigerate overnight.

Notes
