There’s nothing more refreshing than waking up to a bowl of lemon coconut overnight oats, especially in the summer. Overnight oats are convenient during busy mornings, but I love changing up the flavors for variety. It’s hard to go wrong with oats- they’re filling, healthy, and quick. In this recipe you can substitute almond milk and slivered almonds for the coconut. Run out of lemons? Try using fresh orange juice and zest. Drop a note in the comments and let me know which flavor combination you choose!
Lemon Coconut Overnight Oats
These healthy and creamy oats are a refreshing way to start the morning.
Ingredients
- ⅓ cup (27g) rolled oats
- 1 tbsp (12g) chia seeds
- ½ cup (113g) plain Greek yogurt (I used 2%)
- 1-2 tsp maple syrup or honey, optional*
- ¾ tsp lemon juice, freshly squeezed
- ¾ tsp lemon zest (zest of ½ lemon)
- ½ cup (120ml) unsweetened coconut milk
- 1 tbsp (7g) unsweetened coconut chips or flakes, toasted
Instructions
Add all ingredients (except the toasted coconut) to a small bowl and mix. Refrigerate overnight.
Top with coconut and enjoy!

Notes
* I enjoy the taste of Greek yogurt and prefer my oats less sweet, but I recommend first trying this recipe with 1 tsp of sweetener.
